Persimmons
Persimmons (the Greeks called them Diospyros, “food of the gods”) are rich in Vitamin A, potassium, fiber, phytochemicals, antioxidants, iron, calcium and their bright orange color virtually shouts beta-carotene. Nutritious and beautiful they have been a well-kept secret.
Here at Starr Ranch we have two varieties introduced to this country from Japan. The Hachiya is shaped like a large acorn and has to be very ripe to be eaten fresh. When the bright orange color gives way to rosy-pink and the flesh becomes soft and heavy (think water balloon), it’s ready to eat with a spoon – delicious with yogurt. The Fuyu is much like an apple and can be eaten when crisp. Our certified organic persimmons are dry-farmed so that the rich exotic fruit are intensely flavorful.
For our specialty, dried persimmons, each fruit is hand-selected at the optimum moment for perfect color and flavor. Uniform, individual slices are placed on trays for long, slow dehydration. There are no additives of any kind. The finished disks of persimmon taste like sweet pumpkin and carry their natural sand-dollar pattern.
